Pizza Lettuce Wraps

With back-to-school time just around the corner, moms and dads are sure to be scrambling for delicious, healthy and, most importantly, easy foods to pack in their little ones’ lunchboxes. With this simple, no cook version of every child’s favorite food, you’ll have those other kids (and parents) seeing green as yours eats it right up!

Ingredients

  • 1 ¼ cup of cherry or grape tomatoes, quartered
  • ¾ cup of shredded reduced-fat mozzarella
  • 1 ounce of cooked turkey pepperoni slices, chopped
  • ¼ cup of fresh basil
  • 1 tablespoon of fresh oregano
  • 8 large lettuce leaves

Instructions

In a medium bowl, combine all ingredients and toss so evenly mixed. 

Separate and layout lettuce leaves flat on a clean surface. Spoon an ample amount of the tomato mixture onto each leave of lettuce. Roll up into wrap on leave open as cups.
